Bistek Tagalog
Ingredients
- 1.5 lb strip steak 
- 1/3 c kalamansi juice (can sub lemon juice) 
- 1/2 c soy sauce (Filipino soy sauce recommended) 
- 2 sweet onions 
- 6 garlic cloves 
- cooking oil 
- 2-3 bay leaves 
- 1 T butter 
- Steamed white rice (for serving) 
Instructions
- Slice the steak into thin strips. 
- In a non-reactive bowl, add steak strips, kalamansi juice, and soy sauce. Cover with plastic wrap and marinate for 30 minutes - 1 hour. 
- Smash the garlic cloves with a knife and set aside for cooking. 
- Peel and slice the sweet onions into thick rings (I did about 1/2 inch). Do not separate the rings. 
- In a skillet over medium heat, add 1 T cooking oil. 
- Add the sweet onion disks to the pan for about 2 minutes on one side (the disk should be just browned), then flip over for another 2 minutes, trying to keep the rings intact (itβs okay if some come apart). The onions should be slightly soft. Note: You can lower the heat here to keep the onions from getting too burnt. 
- Remove the onion disks from the pan. Turn the heat to medium high. 
- Add the steak strips (and all liquids) to the pan. Add the smashed garlic cloves and bay leaves and simmer for 3-5 minutes, or until the beef is cooked to your liking. 
- Add the 1 T of butter - this will add a nice texture and taste to the sauce! 
- Add the onions to the pan and turn off heat. 
- Serve with white rice.
