Bulalo
Bulalo is the perfect soup that will warm your soul on a cold day. It’s best served with a bowl of rice and a side saucer of patis, but this soup is so flavorful you probably won’t even need it.
Ingredients
- 2 lbs beef shank 
- 1 white onion, cut into 1-inch pieces 
- 1 head cabbage, cut into 1-inch pieces 
- 2 ears corn, cut in thirds 
- 8-10 small red potatoes, cut in half 
- 1 t peppercorns 
- 2 T patis 
- 8 cups water 
- 1 t cooking oil 
Instructions
- Over medium high heat, add oil to stock pot. Brown the beef shanks on all sides. 
- Add onions and water. Bring heat down to a low simmer. Make sure to scrape the browned bits off the bottom. Cover the pot. 
- Keep pot on low simmer for one hour. Then, use a spoon to remove scum and oil from the top of the soup. 
- Continue to cook for 3 hours on low simmer. 
- Add patis and pepper. 
- Add corn, cabbage, and potato to pot. Cover lid and cook for 20 minutes or until vegetables are cooked.
